Peanut Butter & Honey Oatmeal + a weekend wrap up

I love oatmeal a whole lot but I can never find a really good combination that I like. It's either not sweet enough or too watery, etc. This morning, however, I stumbled across a peanut butter & honey oatmeal that sounded REALLY easy and tasty. Oh it was both. It takes about 1 minute to put everything together and 1 minute in the microwave and you're done. So, of course, I had to share! (I didn't take pictures because as we all know, oatmeal is not a very delicious LOOKING food...but I promise it tastes delicious)

Peanut Butter & Honey Oatmeal


Ingredients
  • 1/4c old-fashioned rolled oats
  • 1 Tbsp peanut butter (I prefer crunchy)
  • 1-2tsp honey
  • 1/2c water
Instructions
  1. Put all ingredients in a cereal bowl and microwave 1 minute. Stir to combine. Drizzle with additional honey if desired.
  2. Makes 1 serving


In other news, the boyfriend and I took a trip to see his parents this weekend for father's day. We had a lot of good food, a lot of good drinks and a lot of good fun (as we always do). So this is a bit of a weekend wrap up in pictures.

I just love colorful fruits & veggies and can't help but photographing them.

Baked Okra

Now, I'm from the South and one of my favorite foods was always fried okra.

In Washington, there ain't no meat and three's anywhere around here so that means Laura is making her own okra. I don't really like frying things because it's so unhealthy but mostly because I'm a whimp and I'm surprised I haven't burned the kitchen down yet.

SO tonight I decided to try it out. I bought a pork tenderloin at the store (my favorite is the Hormel Teriyaki Pork Tenderloin, which looks disgusting but IT IS SO GOOD!), grabbed some canned corn and then moved onto making the okra.

This obviously is not going to be as tasty as good ol' southern fried okra...or maybe it is, and I'm just biased... but It's a good healthier version of my favorite side dish. I figured I'd share it with you so that if you love Southern food like me, you can at least be a little healthier about it (and safer too!)


Baked Okra

1 bag of frozen cut okra (I used half of the bag)
Italian style bread crumbs
paprika
2 egg whites
salt & pepper

  • In a bowl, toss together bread crumbs, a few healthy shakes of paprika, and salt & pepper.
  • In a separate bowl, toss a handful of your cut okra in the egg whites until they are nicely coated.
  • Take each piece of okra and cover with your bread crumb mixture. I usually push each side into the bread crumbs so they stick to the egg whites.
  • Line your baking sheet with parchment paper. Place the okra on the baking sheet and make sure they aren’t touching one another.
  • Bake at 375 for 15-20 minutes, turning your okra halfway.
  • Crunch & enjoy!

Mexican Dorito Casserole

I may as well jump right in to posting recipes that I have found, decided to try and loved! My boyfriend honestly asks me to make this every other week. It's really yummy. Not so much healthy, but yummy and so easy!


Mexican Dorito Casserole
Serves 4-6


  • 2 c. shredded cooked chicken
  • 1 c. shredded cheese (or more if you are a cheese hound)
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 can Ro-tel tomatoes (canned tomatoes with jalepenos-mild)
  • 1/2 packet taco seasoning (or more- to taste)
  • Bag of doritos

1. Pre-heat oven to 350-f degrees.

2. In a mixing bowl, combine all ingredients except doritos.

3. In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.
